Through this immersive workshop at the farm, you will be introduced to the basics of mushroom cultivation, from mycelium to fruiting, from the forest to the substrate to inoculation. A unique opportunity to learn concretely how to transform local forest resources into living food.

Program
- AM: Welcome and theoretical part on mushroom cultivation, from laboratory manipulations to outdoor cultivation.
- Lunch break (bring your lunch)
- PM: Tour of the facilities followed by hands-on action including substrate preparation and mycelium inoculation.

Instructor
Nicolas van Caloen
Fungi farmer, ecological entrepreneur, and engaged thinker in socio-ecological transition.
Trained in economics and ecology, Nicolas has traveled across the Americas to study fairer, cooperative, and sustainable alternative models. His journey has led him to analyze issues of economic violence and develop solutions rooted in the solidarity economy. Back in Estrie, he puts these learnings into practice by founding a concrete and regenerative project.
Through his work, Nicolas embodies a vision deeply rooted in the territory, where know-how, autonomy, and ecology meet to build living, resilient, and accessible systems.
"My motivation lies in the necessity to act to address the ecological and socio-economic problems of our time. And we all have the means to do so. From there, our duty is to do everything we can with what we have here and now to build a respectful society and initiate the transition to an ecological and solidarity-based economy."
Mycotrophe is a mushroom farm founded in 2015 in Frelighsburg, within the ESPACES Collective. Rooted in an ecological transition approach, the company develops a local production of gourmet and medicinal organic mushrooms, valuing regional resources and by-products.
